Best Fall Soups: 6 Plant-Based Soups To Try This Season

Can you believe it is October already? The tell-tale signs of fall are here in Dublin as the days get a little less light, and the temperatures start to drop.

I don’t know about you, but I have always been one of those people who as soon as it gets dark, I am ready to put on my pyjamas and get cozy for the night. Of course, growing up in Seattle this meant some days I was ready for bed by 4 in the afternoon!

While I prefer the warm summer sun, and long hours of daylight, I must say that I do also love the fall, first because of the gorgeous changes in the colours of leaves, the designer in me is always taken back by the vibrant colours of the fall, second of course because I can justify getting into pyjamas in the afternoon, and lastly, because of all the delicious fall foods that come with this lovely season!

There is something so comforting about the idea of making fall recipes. The spices, the colours and of course the taste are some of my favourite parts of cooking my fall favourites. Comfort food is in full swing in the fall, and when I think of comfort food, soup is where my mind goes for the ultimate warming delicious meal.

I have compiled six excellent plant-based soups from some of my favourite chefs both local and abroad to bring you this great list of soups to try this season! Without further adieu, let’s jump right in!

1. Sweet Potato and Lime Soup – The Happy Pear

I can honestly say that ever since deciding to eat a plant-based diet, The Happy Pear has quickly become my favourite Irish food company. I love to go into the store and find their hummus, pestos, and soups available, then I found their YouTube channel and that has changed my plant-based eating for the better! Everything I have ever made from their recipes is absolutely amazing, and this soup is one of those things! The lime in this soup brings a great tangy flavour that you typically don’t find in sweet potato soups which is the element I love most about this soup! Find this recipe here.

2. One Pot GF Vegan Minestrone – Minimalist Baker

Minestrone is such a great soup when you need a little more substance to your meal, and cooking it in one pot makes this dish so simple for busy weeknights. Long before I started my adventure of plant-based eating, I was reading the ingredients in foods and trying to only get things with ingredients I could pronounce, and as few as possible was a bonus. That is what I love so much about recipes by Minimalist Baker is that they are all minimal healthy ingredients! Find the recipe here.

3. Roasted Beet and Potato Soup – Deliciously Ella

This recipe comes together so effortlessly into a beautiful creamy soup perfect for the fall. The colour from the beets is my favourite part of this soup, and the sweetness of the beets brings a little different taste than your typical tomato or potato based soups. If you are looking for something a little different that has the prettiest colour you will ever see a food be, this is the soup for you! Find the recipe here.

4. Cheesy Broccoli, Butternut and Red Lentil Soup – Rosanna Davidson

I know what you are thinking – how can I make a broccoli cheddar type soup that is plant based? Your answer is with this vegan secret weapon – Nutritional Yeast. It is rich in B12, which is important for a plant-based diet as you will not be getting it from animal sources anymore. You will also be able to make so many of your favourite comfort foods (looking at you mac and cheese) using this great little product due to nutty cheesy flavour! Sprinkle it onto your salad, or cook it into your favourite sauces! In Ireland, this can be hard to come by, so I buy mine here. This soup brings you the protein, vitamins, and veggies you need to fuel you for the day, and especially if you are new to a plant-based diet, it can be a new vegan version of broccoli cheddar! Find the recipe here.

5. Mexican Quinoa Stew – Cookie and Kate

I have been enjoying Cookie and Kate recipes so much lately I just cannot get enough of her delicious food! Quinoa is sort of a gift to plant-based eaters because of its high protein! This paired with the black beans in this soup get you the plant-based protein sources you need easily. The spice blend in this soup is delicious and satisfies my love of Mexican food, which is much harder to come by now that I am in Ireland rather than San Francisco! Find the recipe here.

6. Spiced Pumpkin Soup – Natural Born Feeder

This fall soup roundup would not be complete without a pumpkin soup! Roz Purcell has outdone herself with the gorgeous presentation and delicious spices used in this soup! This would be the perfect starter to wow your dinner guests this fall, and by using the pumpkins as a bowl you are not letting any of it go to waste. This soup is very easy to make and requires minimal ingredients! You will want a good quality vegan bullion to make this soup with, I personally like to use a reduced salt vegan bullion that you can find here. Find this festive recipe here.

I hope you love these fall plant-based soups as much as I do! Let me know which ones you are going to try! If you have a personal fall favourite soup, I would love to try yours. These recipes come from some of my favourite chefs and bloggers in the plant-based community.
